    Prepare the Sweet Potatoes: Thoroughly wash and peel the sweet potatoes. Using a waffle cutter or a mandoline slicer, cut them into waffle-shaped fries. If you don’t have a waffle cutter, you can slice the sweet potatoes into thick rounds and then cut those diagonally to mimic the waffle shape.

      Soak the Fries: Fill a large bowl with cold water and add the cut sweet potato fries. Let them soak for at least 30 minutes. This soaking process helps to remove excess starch, which contributes to a crunchier texture once baked.

        Drain and Dry: After the soaking time, drain the sweet potatoes in a colander. Use a clean kitchen towel or paper towels to thoroughly pat the fries dry. The drier they are, the better they will crisp up during baking.
