Ingredients

4 medium-sized russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded Parmesan cheese

1/2 cup chopped fresh chives

Sour cream or Greek yogurt, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). For easier cleanup later, line a baking sheet with parchment paper and set it aside.

Prepare the Potatoes: Thoroughly scrub the russet potatoes under cold running water to remove any dirt. Pat them dry using a clean kitchen towel. Using a fork, prick each potato several times to allow steam to escape during the baking process.

Bake the Potatoes: Position the potatoes directly on the oven rack or on the lined baking sheet. Bake for approximately 45 to 60 minutes, until the skins are crispy and the interior is easily pierced with a fork.

Cool and Scoop: Once baked, remove the potatoes from the oven and allow them to cool for about 10 minutes, making them easier to handle. Carefully slice each potato in half lengthwise. Use a spoon to scoop out the flesh, leaving about 1/4 inch of potato attached to the skin for stability.

Season the Skins: Brush both the insides and outsides of the potato skins with olive oil to ensure a rich flavor and crisp texture. Then, evenly sprinkle each skin with garlic powder, onion powder, smoked paprika, salt, and pepper according to your taste preference.

Add Parmesan Cheese: Place the prepared potato skins cut side up on the baking sheet. Generously fill each skin with shredded Parmesan cheese, pressing it down gently to ensure it adheres well.

Crisp the Skins: Return the baking sheet with the potato skins to the oven and bake for an additional 15 to 20 minutes, or until the skins are beautifully crispy and the cheese is golden brown and bubbly.

Garnish: After removing the potato skins from the oven, let them cool for a few minutes. To enhance the flavor and presentation, sprinkle chopped fresh chives over the tops of the skins.

Serve: Serve the crispy Parmesan potato skins warm alongside sour cream or Greek yogurt for dipping. Enjoy these delightful snacks with family and friends!
