2 cups cooked shredded chicken

1 cup BBQ sauce (choose your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup corn (canned or frozen, thawed)

1/2 cup red onion, finely diced

1/4 cup fresh cilantro, chopped (optional)

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Sour cream or guacamole, for serving

Prepare the Chicken Mixture: In a spacious mixing bowl, combine the shredded chicken and BBQ sauce. Stir thoroughly until the chicken is thoroughly coated in the sauce. Next, mix in the corn, diced red onion, and half of the chopped cilantro (if using). Continue mixing until all ingredients are well combined. Season the mixture with garlic powder, onion powder, smoked paprika, salt, and pepper to taste, ensuring an even distribution of flavors.

    Assemble the Quesadillas: On a clean surface, place two of the flour tortillas. Evenly sprinkle a generous amount of mozzarella and cheddar cheese over half of each tortilla. Following this, spoon an even layer of the BBQ chicken mixture over the cheese on each tortilla. For added cheesiness which helps hold the contents together, sprinkle a bit more cheese over the chicken mixture. Carefully fold the tortillas in half, encasing the filling.

Cook for 3-4 minutes until the bottom is golden brown and crispy. Gently flip the quesadilla, adding the remaining tablespoon of olive oil to the skillet.
