Ingredients

14 oz firm tofu, well-pressed and cut into 1-inch cubes

2 cups fresh broccoli florets

1 red bell pepper, thinly sliced

2 medium carrots, julienned

3 cloves garlic, finely minced

1-inch piece of ginger, freshly grated

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon sesame oil

1 tablespoon cornstarch (for that perfect crunch)

1 tablespoon olive oil

1 teaspoon rice vinegar

1 teaspoon honey or maple syrup (optional for sweetness)

1 teaspoon crushed red pepper flakes (optional for heat)

Toasted sesame seeds and sliced green onions for garnish

Instructions

Prepare the Tofu:

    - Start by pressing the tofu to remove excess moisture; this typically takes at least 30 minutes. After pressing, carefully cut the tofu into 1-inch cubes to ensure even cooking.

      Marinate the Tofu:

        - In a mixing bowl, whisk together the soy sauce, sesame oil, rice vinegar, and the optional honey/maple syrup. Gently add the tofu cubes and toss them until completely coated in the marinade. Allow the tofu to soak in the flavors for at least 15 minutes.

          Coat the Tofu:

            - After marinating, sprinkle the cornstarch over the marinated tofu cubes. Gently toss to coat; this step is crucial for achieving that crispy, golden exterior once air-fried.

              Air Fry the Tofu:

                - Preheat your air fryer to 400°F (200°C). Arrange the tofu cubes in a single layer in the air fryer basket. Cook for 15-18 minutes, shaking the basket halfway through the cooking time, until the tofu is perfectly golden and crispy.

                  Stir-Fry the Vegetables:

                    - While the tofu is air frying, heat olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, stirring them for about 30 seconds until they release their fragrant aroma.

                      - Next, introduce the broccoli florets, sliced bell pepper, and julienned carrots to the skillet. Stir-fry the vegetables for 5-7 minutes, or until they are tender-crisp, ensuring they maintain a vibrant color.

                        Combine and Season:

                          - Once the tofu is finished cooking, add the crispy cubes to the skillet with the stir-fried vegetables. If you like some heat, sprinkle in the crushed red pepper flakes. Toss everything together and let it cook for an additional 2-3 minutes, allowing the flavors to meld beautifully.

                            Serve:

                              - Carefully transfer your colorful and crispy tofu stir-fry to a serving platter. For a beautiful finish, sprinkle with toasted sesame seeds and sliced green onions. This dish can be served warm on its own or enjoyed over a bed of fluffy cooked rice or quinoa for a hearty meal.
