Ingredients

1 lb white fish fillets (such as cod or tilapia)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp paprika

1 tsp garlic powder

1 tsp chili powder

Salt and pepper to taste

8 small corn tortillas

1 cup shredded cabbage

1 avocado, sliced

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: creamy jalapeño sauce (store-bought or homemade)

Instructions

Prep the Fish: Start by rinsing the fish fillets under cold water, then pat them dry thoroughly with paper towels. For easier serving, cut the fillets into strips or bite-sized pieces based on your preference.

Seasoning: In a medium mixing bowl, combine paprika, garlic powder, chili powder, salt, and pepper. Mix well and then generously sprinkle this seasoning blend over the fish pieces, ensuring every piece is evenly coated for flavorful bites.

Breading Setup: Prepare your breading station by placing all-purpose flour in one shallow dish, the beaten eggs in a second dish, and the panko breadcrumbs in a third dish. This will make breading the fish quick and efficient.

        Coat the Fish:

          - Start by dredging each piece of fish in flour, ensuring to shake off any excess.

            - Next, dip the floured fish in the beaten eggs, allowing any extra egg to drip back into the bowl.

              - Finally, coat the fish with panko breadcrumbs, pressing gently to ensure the crumbs stick. Repeat this process for all fish pieces until they are all breaded.

Air Fryer Preparation: Preheat your air fryer to 400°F (200°C) for about 5 minutes. To prevent sticking, lightly spray the basket with cooking spray.

Cook the Fish: Arrange the breaded fish pieces in a single layer in the air fryer basket, making sure not to overcrowd them. Lightly spray the tops with additional cooking spray for optimal crispiness. Cook for 8-10 minutes, flipping the pieces halfway through, until they are golden brown and have a crispy texture.

Warm the Tortillas: While the fish is cooking, warm your corn tortillas. You can do this by placing them in a dry skillet over medium heat for 30 seconds per side, or alternatively, wrap them in aluminum foil and warm them in an oven set to low for about 5-10 minutes.

Assemble the Tacos: Once your fish is done cooking, take a tortilla and lay down a few pieces of crispy fish in the center. Top each taco with a handful of shredded cabbage, a few slices of avocado, and sprinkle with fresh cilantro. If desired, add a drizzle of creamy jalapeño sauce for a kick of flavor.

Serve: Squeeze fresh lime juice over the assembled tacos for a zesty finish. Serve your vibrant fish tacos immediately, accompanied by lime wedges for an extra burst of flavor at the table.
