Crispy Air Fried Mushroom Nuggets

2 cups button or cremini mushrooms, cleaned and stems trimmed

1 cup all-purpose flour (or gluten-free flour if preferred)

1 cup breadcrumbs (use panko for extra crunch)

2 large eggs

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Cooking spray or olive oil spray

Instructions
 

Prepare the Mushrooms:

    - Preheat your air fryer to 375°F (190°C).

      - Using a damp cloth, gently wipe the mushrooms to clean them. Depending on their size, cut the mushrooms in half or quarters for even cooking.

        Set Up Breading Station:

          - Arrange three shallow bowls for breading.

            - In the first bowl, combine flour, salt, pepper, garlic powder, onion powder, smoked paprika, and dried oregano. This will be your seasoned flour.

              - In the second bowl, whisk the eggs until fully combined.

                - In the third bowl, mix together the breadcrumbs and grated Parmesan cheese.

                  Bread the Mushrooms:

                    - Take a piece of mushroom and coat it in the seasoned flour, shaking off any excess.

                      - Dip it into the egg wash, allowing any excess egg to drip off.

                        - Finally, roll the mushroom in the breadcrumb mixture, pressing down slightly to ensure the breadcrumbs adhere well.

                          - Repeat this process for all mushroom pieces until they are thoroughly coated.

                            Air Fry the Nuggets:

                              - Lightly spray the air fryer basket with cooking spray to prevent sticking.

                                - Arrange the breaded mushrooms in a single layer in the basket, ensuring they are spaced out (you may need to cook in batches to avoid overcrowding).

                                  - Spray the tops of the mushroom nuggets with a light mist of olive oil spray to enhance crispiness.

                                    Cook:

                                      - Air fry the mushrooms for 10-12 minutes, shaking the basket halfway through cooking to ensure even crispness.

                                        - The nuggets are done when they are golden brown and crispy on the outside.

                                          Serve:

                                            - Once cooked, carefully remove the mushroom nuggets from the air fryer and let them cool for a few minutes.

                                              - Serve them warm with your choice of dipping sauce, such as marinara, ranch, or a zesty aioli for a delightful flavor combination.
