Ingredients

1 cup orzo pasta

2 tablespoons extra virgin olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with their juices

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for heat)

½ cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Instructions

Sauté the Aromatics: In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the finely chopped onion and sauté for approximately 3-4 minutes, or until the onion turns translucent and softens.

Add Garlic: Stir in the minced garlic and continue cooking for an additional minute, stirring frequently until the garlic is fragrant but not browned.

Combine Ingredients: Add the diced tomatoes (with their accompanying juices), vegetable broth, dried basil, dried oregano, and the optional red pepper flakes to the skillet. Stir to combine and bring the mixture to a gentle simmer.

Cook the Orzo: Once simmering, add the orzo pasta to the skillet, ensuring it is evenly distributed. Stir well, then allow it to cook for about 10-12 minutes, stirring occasionally. The goal is for the orzo to become al dente while absorbing most of the liquid.

Create the Creamy Sauce: Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese. Keep stirring until the cheese is fully melted and the sauce takes on a creamy consistency. Taste and season with salt and freshly ground black pepper as desired.

Let it Rest: Remove the skillet from heat and let the dish sit for a couple of minutes. This allows the flavors to meld beautifully.

Serve & Garnish: Serve the creamy tomato Parmesan orzo hot, garnished with fresh basil leaves and an extra sprinkle of grated Parmesan cheese on top, if you like.
