Ingredients

1 lb (450g) potato gnocchi

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 tablespoon tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for heat)

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C), ensuring it's ready for baking.

Cook the Gnocchi: Boil a large pot of salted water. Add the gnocchi, cooking them according to the package instructions. They are ready when they float to the surface, typically in about 2-3 minutes. Once cooked, drain the gnocchi and set aside.

Sauté the Aromatics: In a large oven-safe skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, roughly 4-5 minutes. Incorporate the minced garlic and continue to cook for an additional minute, allowing the garlic to release its fragrance.

Prepare the Sauce: To the skillet, add the undrained diced tomatoes, tomato paste, dried basil, dried oregano, and red pepper flakes (if opting for some spice). Stir the mixture well and allow it to simmer for about 5 minutes. This step helps meld the flavors beautifully.

Add Cream and Gnocchi: Reduce the heat to low. Slowly pour in the heavy cream while stirring until fully combined. Gently fold in the cooked gnocchi into the sauce, ensuring they are well coated.

Cheese It Up: Generously sprinkle the shredded mozzarella and grated Parmesan cheese over the gnocchi mixture, ensuring an even distribution for optimal melty goodness.

Bake: Transfer the skillet to your preheated oven. Bake for 20-25 minutes, or until the cheese is bubbly and forms a golden-brown crust on top.

Garnish and Serve: Once out of the oven, let the dish cool for a few minutes. Before serving, garnish with fresh basil leaves to add a pop of color and flavor.

Enjoy this creamy, cheesy delight—it's an ideal choice for a comforting dinner that warms the soul!
