Creamy Sun-Dried Tomato Chicken Pasta

12 oz (340g) pasta (fettuccine or penne)

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes (preferably oil-packed), drained and chopped

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach (optional)

Fresh basil leaves for garnish

Additional Parmesan cheese for serving

Instructions
 

Cook the Pasta: Fill a large pot with water, adding a generous pinch of salt. Bring to a boil and then add the pasta. Cook according to the package instructions until al dente. Once cooked, drain the pasta, reserving ½ cup of the cooking water for later use, and set the drained pasta aside.

    Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced chicken pieces and season them lightly with salt and pepper. Cook for about 6-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet, placing it on a plate to keep warm while you prepare the sauce.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat slightly and add the minced garlic, sautéing it for about 30 seconds until it becomes fragrant. Next, add the chopped sun-dried tomatoes, stirring them in and cooking for an additional 2 minutes to soften them.

        Make the Cream Sauce: Lower the heat even further and pour in the heavy cream and chicken broth. Allow the mixture to come to a gentle simmer. Gradually stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese has melted and the sauce turns creamy. If using, add the fresh spinach and stir until just wilted.

          Combine Pasta and Chicken: Return the cooked pasta and chicken to the skillet, tossing everything together so that the pasta and chicken are well-coated in the creamy sun-dried tomato sauce. If the sauce appears too thick, gradually add some of the reserved pasta water until the desired consistency is achieved.
