8 oz penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and black pepper, to taste

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped (packed in oil)

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach, roughly chopped

Fresh basil leaves, for garnish

Extra Parmesan, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain the pasta and set aside, ensuring to reserve 1/2 cup of the pasta water for later use.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium heat. When the oil is hot, place the chicken breasts in the skillet. Sear the chicken for 6-7 minutes on each side, or until they are golden brown and have reached an internal temperature of 165°F. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Create the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes and cook for an additional minute to meld the flavors. Next, pour in the heavy cream and chicken broth, stirring until well combined. Allow the mixture to simmer for 2-3 minutes, letting the flavors intensify.

        Add Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese has melted and the sauce thickens slightly. If the sauce is too thick for your liking, gradually stir in the reserved pasta water until the desired consistency is achieved.

          Combine Pasta and Spinach: Add the drained pasta and roughly chopped spinach to the skillet, tossing everything together to fully coat the pasta in the creamy sauce. Cook for an additional 2-3 minutes, just until the spinach wilts down.

            Add Chicken: Gently fold the sliced chicken into the mixture, allowing it to warm through in the sauce. Taste and adjust seasoning with salt and pepper as necessary.
