2 large red bell peppers

Roast the peppers in the oven for about 25-30 minutes, or until their skins are charred and blistered. Once roasted, take them out of the oven and let them cool. After they've cooled, carefully peel off the skins, remove the seeds, and roughly chop the roasted peppers into bite-sized pieces.

    Cook the Pasta: Fill a large pot with water, generously salt it, and bring it to a boil. Add your choice of pasta and cook according to the package instructions until al dente.
