Creamy Roasted Garlic Spaghetti Squash

1 medium spaghetti squash

6 cloves garlic, unpeeled

2 tablespoons olive oil

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup grated Parmesan cheese (or nutritional yeast for a dairy-free option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Fresh parsley or basil, chopped for garnish

Optional: crushed red pepper flakes for added spice

Prepare the Spaghetti Squash:

    Preheat your oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise and remove the seeds using a spoon. Drizzle 1 tablespoon of olive oil evenly over the cut sides of the squash. Season generously with salt and freshly ground black pepper. Place the squash halves cut-side down on a baking sheet lined with parchment paper.

      Roast the Garlic:

        On the same baking sheet, add the unpeeled garlic cloves around the squash. Roast everything in the preheated oven for approximately 40-45 minutes. The spaghetti squash should be tender enough to be pierced easily with a fork, and the garlic should be golden and soft.

          Prepare the Cream Mixture:

            In a medium saucepan over medium heat, combine the heavy cream (or coconut cream), garlic powder, onion powder, and dried thyme. Warm the mixture for about 5-10 minutes, stirring frequently, until it reaches a gentle simmer.
