Ingredients

1 head of garlic

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup mayonnaise

1 teaspoon lemon juice

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, finely chopped (for garnish)

Assorted fresh veggies (e.g., carrots, cucumbers, bell peppers) and pita chips (for serving)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Use a sharp knife to cut about 1/4 inch off the top of the garlic head, exposing the tips of the cloves. Drizzle a small amount of olive oil over the exposed cloves, allowing it to soak in. Wrap the garlic head tightly in aluminum foil and place it on a baking sheet. Roast in the preheated oven for 30-35 minutes, or until the cloves feel soft to the touch and appear golden brown. After roasting, remove from the oven and let it cool slightly before handling.

Prepare the Dip Base: In a large mixing bowl, add the softened cream cheese, sour cream, and mayonnaise. Using an electric mixer or a whisk, combine these ingredients thoroughly until you achieve a creamy, smooth consistency.

Squeeze the Garlic: Once the roasted garlic is cool enough to handle, gently squeeze each garlic clove to release them from their skins into the bowl of dip base. You can control the amount of garlic based on your personal taste - start with half or all of it, and adjust as desired.

Season the Mixture: To the bowl with the garlic cloves, add the lemon juice, dried thyme, salt, and black pepper. Stir the mixture well until all ingredients are fully incorporated and the dip is homogeneous.

Chill: Cover the bowl with plastic wrap or a lid, and refrigerate the dip for at least 30 minutes. This allows the flavors to meld together and intensify, enhancing the overall taste.

Garnish & Serve: Just before serving, sprinkle the top of the dip generously with fresh parsley for a vibrant touch. Present this creamy roasted garlic bliss dip with a colorful array of fresh vegetables like crunchy carrots and crisp cucumbers, along with a side of pita chips for a satisfying and enjoyable snack experience!
