Creamy Pumpkin Alfredo Pasta

12 oz fettuccine pasta

1 cup canned pure pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon sage (fresh or dried)

1/2 teaspoon ground nutmeg

Salt and freshly ground black pepper to taste

Fresh parsley, finely chopped (for garnish)

Crushed red pepper flakes (optional, for added heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until it reaches al dente. Once cooked, reserve about 1 cup of the pasta water, then drain the pasta and set aside.

    Create the Sauce Base: In the same pot used for cooking pasta, melt the unsalted butter over medium heat. Add the minced garlic and sauté, stirring constantly, until it becomes fragrant, about 1 minute.

      Incorporate Pumpkin and Cream: Gradually stir in the pumpkin puree and heavy cream. Mix well until the ingredients are fully combined and heated through.

        Season the Sauce: Add the freshly grated Parmesan cheese, sage, ground nutmeg, and season with salt and black pepper. Stir continuously until the cheese melts and the sauce becomes creamy. If the sauce appears too thick, add some reserved pasta water, little by little, until the desired consistency is achieved.

          Combine Pasta and Sauce: Return the drained fettuccine to the pot, and gently toss the pasta in the creamy pumpkin sauce until every strand is evenly coated. Taste and adjust the seasoning with additional salt and pepper if needed.
