1 cup mushrooms, sliced (cremini or button are preferred)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sour cream

1 cup cream of mushroom soup (canned or homemade)

1 cup shredded mozzarella cheese

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1 cup cooked rice or quinoa (optional, for serving)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it's ready for baking.

    Prepare the Chicken: Season the chicken breasts evenly with salt, pepper, and paprika. Heat the olive oil in a large skillet over medium heat. Sear each chicken breast for about 4-5 minutes on each side until they achieve a nice golden brown color. Once done, remove them from the skillet and set aside on a plate.

      Sauté Vegetables: In the same skillet, add the finely chopped onion and sauté for approximately 2-3 minutes until it turns translucent.
