12 oz (340g) penne pasta

4 cups fresh spinach, roughly chopped

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup diced jalapeños (choose fresh for a vibrant flavor or pickled for tangy heat)

1/2 cup freshly grated Parmesan cheese

4 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

Salt and freshly ground black pepper to taste

1/2 cup panko breadcrumbs (for a crunchy topping)

2 tbsp olive oil

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for the bake.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Drain the pasta thoroughly and set it aside in a large bowl.

      Prepare the Sauce: In a spacious mixing bowl, combine the softened cream cheese and sour cream. Stir in the shredded cheddar and mozzarella cheeses until you achieve a rich and creamy texture.
