Ingredients

12 oz penne pasta

2 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 small onion, finely chopped

5 oz fresh baby spinach

1 cup heavy cream

½ cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

1 tablespoon freshly squeezed lemon juice

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package directions until al dente, usually about 10-12 minutes. Once cooked, drain the pasta and set it aside, reserving approximately ½ cup of the pasta water for later use.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing for about 3-4 minutes, or until the onion turns translucent and fragrant, stirring occasionally to avoid burning the garlic.

Add Spinach: Toss in the fresh baby spinach and cook for about 2-3 minutes, stirring frequently, until the spinach has wilted down significantly.

Make the Cream Sauce: Lower the heat to a gentle simmer. Pour in the heavy cream and stir well to combine it with the garlic and spinach mixture. Gradually sprinkle in the grated Parmesan cheese and Italian seasoning, stirring continuously until the cheese melts completely and the sauce has a velvety consistency.

Combine Pasta and Sauce: Incorporate the drained penne pasta into the cream sauce, stirring gently to coat the pasta evenly. If the sauce appears too thick, gradually add in some of the reserved pasta water until the desired creamy consistency is reached. Season with salt, black pepper, and lemon juice to enhance the flavors.

Serve: Once combined, remove the skillet from the heat. Serve the creamy penne immediately, garnished with fresh basil leaves for a pop of color and added flavor, if desired.
