Ingredients

8 oz. fettuccine or spaghetti

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

Salt and freshly cracked black pepper to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

Optional: A sprinkle of red pepper flakes for a hint of heat

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine or spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set it aside in a colander.

Sauté the Garlic: In a spacious skillet over medium heat, heat the olive oil until shimmering. Once heated, add the minced garlic and sauté for approximately 1-2 minutes, stirring often, until it's fragrant and golden. Take care not to let it burn, as burnt garlic can impart a bitter taste.

Make the Cream Sauce: Carefully pour in the heavy cream and bring it to a gentle simmer. Stir constantly to prevent it from scorching, then gradually whisk in the grated Parmesan cheese. Continue stirring until the cheese is melted and the sauce is smooth and creamy.

Add Seasonings: Stir in the dried Italian herbs, followed by salt and freshly cracked black pepper to taste. For those who enjoy a little heat, don’t hesitate to add in a pinch of red pepper flakes.

Combine with Pasta: Introduce the cooked pasta into the skillet with the sauce, using tongs to toss the pasta gently until it’s well coated with the creamy sauce. If the sauce appears too thick, gradually incorporate some of the reserved pasta water, a little at a time, until the desired consistency is reached.

Serve: Once everything is heated through, taste and adjust any seasonings as needed. Remove from heat and garnish the dish with the freshly chopped parsley. Serve immediately for the best flavor.
