Creamy Avocado Ranch Pasta

12 oz pasta (fettuccine or penne recommended)

2 ripe avocados, pitted and peeled

1 cup sour cream or Greek yogurt

1/2 cup buttermilk

1 packet (approximately 1 oz) ranch dressing mix

2 cloves garlic, minced

1 tablespoon fresh lemon juice

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1/4 cup cherry tomatoes, halved (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add your choice of pasta and cook according to the package instructions until it reaches al dente texture. Once done, drain the pasta and set aside. Remember to reserve about 1/2 cup of the pasta water for later use.

    Prepare the Avocado Sauce: While the pasta is cooking, take a blender or food processor and add the ripe avocados, sour cream or Greek yogurt, buttermilk, ranch dressing mix, minced garlic, and fresh lemon juice. Blend the ingredients together until you achieve a smooth and creamy consistency. If the sauce appears too thick, gradually mix in some of the reserved pasta water until it reaches your desired creamy texture.

      Combine Pasta and Sauce: In a large mixing bowl, gently combine the cooked pasta with the prepared avocado ranch sauce. Toss the pasta until it's evenly coated with the sauce. If the sauce seems too thick to coat the pasta, feel free to add more reserved pasta water a little at a time until it's perfectly creamy.

        Season to Taste: Once combined, taste the dish and adjust the flavor by adding salt and pepper according to your discretion.
