Ingredients

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1 cup fresh cranberries, roughly chopped (or 3/4 cup dried cranberries)

1 large apple, cored and diced (preferably a tart variety like Granny Smith)

1/2 cup green onions, chopped

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey (adjust for sweetness as desired)

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup sunflower seeds or chopped walnuts for added crunch

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, grated carrots, and diced apple. If you’re using fresh cranberries, incorporate them at this stage for a burst of flavor.

Mix the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well blended and smooth. This dressing will bring everything together beautifully.

Combine: Pour the dressing over the prepared vegetable mixture. Gently toss the ingredients until they are evenly coated with the dressing. If you’re using dried cranberries, fold them in at this point.

Add Crunch: For an extra layer of texture, gently fold in the sunflower seeds or chopped walnuts. This optional step will add a delightful crunch to your coleslaw.

Chill: Cover the coleslaw with plastic wrap or a lid and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and enhances the overall taste of the dish.

Serve: Just before serving, give the coleslaw another gentle toss to redistribute the dressing. Taste and adjust the seasoning with additional salt and pepper if needed. Enjoy this refreshing and vibrant side dish!
