Ingredients

1¾ cups (220g) all-purpose flour

2 cups (400g) granulated sugar

¾ cup (65g) unsweetened cocoa powder

1½ teaspoons baking powder

1½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup (240ml) whole milk

½ cup (120ml) vegetable oil

2 teaspoons vanilla extract

1 cup (240ml) boiling water

Optional: ½ cup (90g) chocolate chips or chopped nuts for added texture

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them thoroughly with butter or cooking spray, then dusting with flour. This will ensure the cakes release easily after baking.

Mix Dry Ingredients: In a large mixing bowl, use a sifter to combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Sift until well mixed to aerate the mixture, which helps prevent clumping and creates a lighter cake.

Add Wet Ingredients: Add the large eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture. Using an electric mixer on medium speed, beat the mixture for about 2 minutes until the batter is smooth and well combined.

Incorporate Boiling Water: Gradually stir in the boiling water. Take care as the batter will become thin—this is expected for a moist cake!

Optional Add-Ins: If you’re adding chocolate chips or nuts for extra texture, fold them gently into the batter at this point.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center pulls out clean.

Cool the Cakes: Once baked, allow the cakes to cool in the pans for about 10 minutes. After that, carefully turn them out onto wire racks to cool completely. Make sure the cakes are completely cool before frosting.

Frosting (Optional): For a delicious frosting option, make a classic chocolate buttercream. Beat together 1 cup (230g) of softened unsalted butter, 3½ cups (440g) of powdered sugar, ½ cup (50g) of cocoa powder, and 2 to 4 tablespoons of milk until the mixture is fluffy and easily spreadable.

Assemble the Cake: Once completely cooled, place one cake layer on a serving plate. Generously spread frosting on top of the first layer. Place the second cake layer on top and continue to frost the top and sides of the entire cake.

Decorate and Serve: For an attractive finish, consider garnishing the cake with chocolate shavings, a sprinkle of cocoa powder, or fresh berries. Slice into 12 portions and enjoy this indulgent dessert!
