Ingredients

4 boneless, skinless chicken breasts

8 slices of Swiss cheese

8 slices of deli ham (Black Forest or honey ham recommended)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup Dijon mustard (for serving)

1 cup chicken broth

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven:

Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking when the chicken is prepared.

      Prepare the Chicken:

Take one chicken breast and place it between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken until it reaches a thickness of about 1/2 inch. Repeat this process for all the chicken breasts to ensure uniformity.

          Layer Ham and Cheese:

On each flattened chicken breast, lay down 2 slices of ham evenly, followed by 2 slices of Swiss cheese. Starting from one end, tightly roll up each chicken breast, ensuring the fillings stay intact. Secure each roll with toothpicks or kitchen twine to hold them closed during cooking. Repeat with all chicken breasts.

              Set Up Breading Station:

In three shallow dishes, arrange your ingredients: put the flour in the first dish, whisk the eggs in the second dish, and in the third dish, combine breadcrumbs, garlic powder, onion powder, thyme, salt, and pepper for a flavorful coating.

                  Bread the Chicken:

Take each chicken roll and dredge it in the flour, shaking off any excess. Next, dip the roll in the beaten eggs, allowing any surplus to drip back into the dish. Lastly, roll the chicken in the breadcrumb mixture, pressing gently to ensure the crumbs stick well.

                      Brown the Chicken:

In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the prepared chicken rolls and cook for about 4-5 minutes per side, or until each roll is beautifully golden brown. Once browned, transfer the skillet directly to the preheated oven.

                          Bake:

Pour the chicken broth carefully around the chicken rolls in the skillet. Cover the skillet with aluminum foil (optional) to retain moisture and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

                              Serve:

Once baked and fully cooked, carefully remove the toothpicks or twine from the chicken rolls. Serve them hot, drizzled with Dijon mustard and garnished generously with freshly chopped parsley for a pop of color and flavor.

                                  Prep Time: 20 mins | Total Time: 50 mins | Servings: 4

Presentation Tips: For an attractive plating, place the chicken rolls on a serving platter with a small bowl of Dijon mustard in the center. Sprinkle additional herbs or microgreens around for added color.
