2 ripe bananas, mashed

1 cup rolled oats

1 cup whole wheat flour

1/2 cup firmly packed brown sugar

1/2 cup Greek yogurt or unsweetened applesauce

1/4 cup honey or pure maple syrup

1 large egg

1 teaspoon pure vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon (optional)

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips or dried fruit (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Prepare a muffin tin by either lining it with paper liners or lightly greasing it with cooking spray.

    In a medium-sized mixing bowl, mash the ripe bananas using a fork or potato masher until they reach a smooth consistency.

      To the mashed bananas, add Greek yogurt (or applesauce), honey (or maple syrup), the egg, and vanilla extract. Whisk the mixture until it is fully combined and creamy.

        In a separate large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, baking powder, salt, and ground cinnamon. Mix the dry ingredients thoroughly using a spatula or whisk.

          Gently pour the wet mixture into the bowl of dry ingredients. Use a spatula to fold them together until just combined, being careful not to overmix. It's fine if there are a few lumps remaining.

            If desired, gently fold in chopped walnuts or pecans, chocolate chips, or dried fruit of your choice to enhance the flavor and texture of the muffins.

              Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
