2 cups fresh strawberries, hulled and sliced

3 tablespoons granulated sugar (adjust based on ripeness of strawberries)

1 teaspoon pure vanilla extract

2 cups whole milk

1/2 cup heavy cream

1/4 cup cornstarch

1/4 teaspoon salt

1/2 teaspoon freshly squeezed lemon juice

Whipped cream, for serving (optional)

Additional fresh strawberries, for garnish (optional)

Instructions
 

Macerate the Strawberries: In a medium bowl, add the sliced strawberries along with 2 tablespoons of sugar and the lemon juice. Gently toss the strawberries until they are well-coated with sugar. Let them rest for about 15 minutes to allow their natural juices to release and create a delicious syrup.

    Make Strawberry Milk: In a blender, combine the macerated strawberries along with their juices, whole milk, and vanilla extract. Blend on high speed until the mixture is completely smooth and well combined. Set aside a few spoonfuls of this strawberry milk mixture for garnish later.

      Prepare the Pudding Base: In a medium saucepan over medium heat, whisk together the heavy cream, remaining tablespoon of sugar, salt, and cornstarch. Continuously whisk the mixture until it begins to thicken and small bubbles form, approximately 5-7 minutes.
