Ingredients

2 cups fresh blueberries

1 cup Greek yogurt (choose vanilla for sweetness or plain for a tangy flavor)

2 tablespoons honey or maple syrup (for sweetness)

1 teaspoon vanilla extract (for added flavor)

1/4 teaspoon ground cinnamon (optional, for warmth)

1/4 cup crushed graham crackers or granola (for a crunchy topping)

Fresh mint leaves (for garnish and a pop of color)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon (if you’re using it). Use a whisk or spatula to mix thoroughly until the mixture is smooth and evenly blended.

Coat the Blueberries: Gently rinse the fresh blueberries under cold running water to clean them, then pat them dry using a paper towel. Take each blueberry and dip it into the yogurt mixture, ensuring that it is fully coated for optimum flavor.

Create Layers: Line a baking sheet with parchment paper. Carefully arrange the yogurt-coated blueberries on the sheet, spacing them apart to prevent sticking while they freeze.

Add Toppings: While the yogurt coating is still wet, sprinkle the crushed graham crackers or granola generously over the blueberries. This will allow the toppings to adhere perfectly to the surface.

Chill: Place the baking sheet in the freezer and allow the blueberry bites to chill for a minimum of 1 to 2 hours, or until the yogurt coating is think and firm to the touch.

Serve: After freezing, take the blueberry bites out from the freezer. Let them sit at room temperature for about 5 minutes; this will make them easier to eat. Just before serving, garnish with fresh mint leaves for an extra touch of freshness and visual appeal.

Store: If you have any leftovers, store them in an airtight container in the freezer where they will keep well for up to a week.
