1 cup sliced pepperoni

1 cup Brie cheese, cut into small pieces

1 cup grape or cherry tomatoes, halved

1/2 cup pitted green olives, sliced

1/2 cup chicken broth

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Begin by patting the chicken thighs dry with a paper towel to remove excess moisture, which helps to achieve a nice sear. Season both sides generously with salt and pepper.
