1 cup rolled oats

1 cup grated carrots (approximately 2 medium-sized carrots)

1/2 cup almond flour

1/2 cup packed brown sugar

1/2 cup unsweetened applesauce

1/4 cup pure maple syrup

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

1/2 cup chopped walnuts (optional)

Preheat your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by greasing it lightly or lining it with parchment paper for easy removal later.

    In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir the ingredients together thoroughly until evenly mixed.

      In a separate bowl, whisk together the packed brown sugar, unsweetened applesauce, pure maple syrup, melted coconut oil, eggs, and vanilla extract until you achieve a smooth consistency.

        Gradually add the wet mixture to the dry ingredients. Stir gently until just combined. Fold in the grated carrots, and if desired, add the raisins and chopped walnuts to the mixture for added texture and flavor.

          Transfer the prepared mixture into the greased or lined baking dish. Use a spatula to spread and smooth it evenly across the dish.

            Bake in the preheated oven for 30-35 minutes. The oatmeal squares are done when the top is golden brown, and a toothpick inserted into the center comes out clean.

              Once baked, take the dish out of the oven and allow it to cool in the pan for approximately 10 minutes. After that, carefully move the squares to a wire rack to cool completely.
