Beef Tacos with Mango Slaw

Ingredients
  

For the Beef Filling:

1 lb lean ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

1 tbsp olive oil

For the Mango Slaw:

1 cup green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 ripe mango, peeled and diced into small cubes

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime (approximately 2 tablespoons)

1 tbsp honey

Salt and freshly ground pepper, to taste

For Assembly:

8 small corn tortillas

Wedges of lime, for serving

Extra fresh cilantro, for garnish

Instructions
 

Prepare the Beef Filling:

    - Heat the olive oil in a large skillet over medium heat. Once hot, add the finely chopped onion and minced garlic. Sauté for approximately 3-4 minutes, or until the onion becomes translucent.

      - Stir in the ground beef, breaking it apart with a spatula as it cooks. Brown the beef for about 5-7 minutes, ensuring it is fully cooked and no longer pink.

        - Add ground cumin, chili powder, smoked paprika, sea salt, and black pepper to the pan. Stir well and cook for an additional 2-3 minutes until the spices become fragrant. Once done, remove from heat and set aside.

          Make the Mango Slaw:

            - In a large mixing bowl, combine the shredded green cabbage and red cabbage, diced mango, thinly sliced red onion, and chopped cilantro.

              - In a separate small bowl, whisk together the lime juice, honey, and a pinch of salt and pepper. Pour this dressing over the slaw mixture and toss gently to ensure all ingredients are evenly coated. Taste, and adjust seasoning if desired.

                Warm the Tortillas:

                  - In a dry skillet over medium heat, warm each corn tortilla for about 30 seconds on each side, just until they are soft and pliable. To keep them warm, wrap them in a clean kitchen towel as you finish warming the rest.

                    Assemble the Tacos:

                      - To assemble each taco, take a warm tortilla and add a generous scoop of the beef filling. Top it off with a spoonful of the refreshing mango slaw.

                        - Garnish each taco with additional cilantro and serve with lime wedges on the side for squeezing.
