1 lb baby carrots (or 2-3 medium regular carrots, peeled and cut into 1-inch sticks)

3 tablespoons balsamic vinegar

2 tablespoons honey (or maple syrup for a vegan option)

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon salt

¼ teaspoon freshly ground black pepper

Fresh parsley, finely chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) to preheat while you prepare the other ingredients.

    Prepare the Carrots: If using regular carrots, start by peeling and cutting them into 1-inch sticks. Place the carrots in a large mixing bowl.

      Make the Balsamic Glaze: In a separate bowl, vigorously whisk together the balsamic vinegar, honey (or maple syrup), olive oil, thyme, salt, and black pepper until the mixture is well emulsified and smooth.
