Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and freshly ground black pepper, to taste

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh or canned)

1 cup cherry tomatoes, halved

1 jalapeño pepper, thinly sliced (optional for heat)

1 cup shredded cheese (cheddar, pepper jack, or a blend)

¼ cup fresh cilantro, chopped

1 ripe avocado, diced

Sour cream or Greek yogurt, for serving

Lime wedges, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to create the perfect environment for crisping your sweet potato chips.

Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and peel them using a vegetable peeler. Slice them into thin rounds, aiming for a thickness of about 1/4 inch to ensure even cooking.

Season the Sweet Potatoes: In a large mixing bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, ground cumin, and a sprinkle of salt and freshly ground black pepper. Make sure each slice is evenly coated with the seasoning mixture.

Bake the Chips: Arrange the seasoned sweet potato slices in a single layer on a parchment paper-lined baking sheet. Bake them in the preheated oven for 20-25 minutes, flipping the slices halfway through. You want them to be tender and slightly crispy at the edges.

Layer the Nachos: Once your sweet potato slices are perfectly baked, reduce the oven temperature to 350°F (175°C). In a large baking dish, create a layer with half of the sweet potato chips. Top this layer with half of the black beans, corn, halved cherry tomatoes, jalapeño slices (if using), and shredded cheese. Repeat the layers by adding the remaining sweet potato chips and the rest of the toppings.

Melt the Cheese: Return the loaded nacho dish to the oven and bake for an additional 10-15 minutes, or until the cheese is fully melted and bubbly, creating a deliciously gooey topping for your nachos.

Garnish and Serve: Carefully remove the nachos from the oven. Sprinkle the loaded nachos with fresh cilantro and diced avocado for a pop of color. Serve hot with a dollop of sour cream or Greek yogurt on the side, alongside lime wedges for an added zest.
