Ingredients

2 ripe avocados

4 large eggs

2 tablespoons Sriracha (plus extra for drizzling)

1 tablespoon fresh lime juice

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped

1/4 cup shredded cheese (your choice of cheddar or mozzarella)

Optional toppings: diced tomatoes, sliced green onions, crumbled feta cheese, or sliced jalapeños

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it is hot and ready for baking.

Prepare the Avocados: Carefully slice the avocados in half lengthwise and remove the pits. To create a larger cavity for the eggs, use a spoon to scoop out a bit more of the flesh, being mindful not to break the avocado skin.

Mix the Filling: In a small mixing bowl, combine the Sriracha and lime juice, adding salt and pepper to taste. Feel free to adjust the amount of Sriracha based on your preferred spice level.

Assemble the Boats: Arrange the avocado halves in a baking dish, ensuring they sit securely. Gently crack an egg into each avocado half. If the egg doesn’t fit, you can pour a small amount out—just make sure not to let it overflow.

Top with Seasoning: Drizzle the Sriracha mixture generously over the eggs and avocados. Add a sprinkle of shredded cheese on top for a delicious melt during baking.

Bake the Avocado Boats: Transfer the baking dish to the preheated oven and bake for approximately 15-20 minutes. Keep an eye on them until the egg whites are set and the yolks reach your desired doneness.

Garnish and Serve: After baking, carefully remove the dish from the oven and let it cool for a minute. Garnish with fresh chopped cilantro and any of the optional toppings you desire. If you like it extra spicy, drizzle more Sriracha on top.

Enjoy: Serve your warm and delectable avocado egg boats immediately, and dig into this tasty, healthy dish packed with flavor!
