1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the Cheesecake Layer:

16 oz cream cheese, softened to room temperature

¾ cup granulated sugar

1 teaspoon pure vanilla extract

3 large eggs

½ cup sour cream

2 teaspoons fresh lemon juice

For the Apple Filling:

3 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced

½ cup packed light brown sugar

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 tablespoon fresh lemon juice

2 tablespoons cornstarch

For the Topping:

½ cup caramel sauce (store-bought or homemade)

Whipped cream (for serving)

Crushed walnuts or pecans (optional, for garnish)

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Prepare a 9x13-inch baking pan by greasing it lightly and lining the bottom with parchment paper to facilitate easy removal after baking.

    Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, granulated sugar, and ground cinnamon. Mix until the ingredients form a texture similar to wet sand. Press the mixture firmly and evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 10 minutes, then remove and allow it to cool completely.

      Make the Apple Filling: In a large mixing bowl, toss the thinly sliced apples with the brown sugar, ground cinnamon, ground nutmeg, fresh lemon juice, and cornstarch until the apples are well coated. Set this mixture aside for about 10 minutes to allow the flavors to combine and the apples to soften slightly.

        Prepare the Cheesecake Layer: In a separate mixing bowl, beat the softened cream cheese with granulated sugar using an electric mixer on medium speed until it is smooth and creamy, about 2 minutes.               Cool and Chill: Remove the bars from the oven and allow them to cool at room temperature for about 1 hour. After cooling, transfer the pan to the refrigerator and chill for at least 4 hours, or overnight for the best results to ensure the bars are perfectly set.
