1/2 cup rolled oats

1/2 cup all-purpose flour

1/4 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 cup cold butter (or coconut oil), cut into small cubes

A pinch of salt

Preheat the Oven: Set your oven to preheat at 350°F (175°C). Prepare a standard 12-cup muffin tin by lining it with paper liners or light greasing it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, add the rolled oats, whole wheat flour, brown sugar, baking soda, baking powder, ground cinnamon, and pinch of salt. Mix together until all ingredients are evenly combined.

      Mix Wet Ingredients: In a separate bowl, whisk the milk, applesauce, vegetable oil, egg, and vanilla extract until the mixture is smooth and well blended.
