1/2 cup black beans (canned, drained, and rinsed)

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and freshly cracked black pepper to taste

2 tablespoons olive oil or a light cooking spray

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the mixed vegetables, black beans, ground cumin, smoked paprika, salt, and pepper. Toss well until all the vegetables are evenly coated with the spices.

    Assemble the Quesadillas: Lay out two tortillas flat on a clean work surface. Evenly sprinkle half of the shredded cheese over each tortilla.
