Ingredients

1 cup pizza dough (store-bought or homemade)

½ cup pizza sauce

1 cup shredded mozzarella cheese

½ cup finely chopped bell peppers (any color)

½ cup finely chopped mushrooms

¼ cup finely chopped spinach

¼ cup sliced black olives (optional)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

Cooking spray or olive oil

Instructions

Preheat the Air Fryer: Begin by preheating your air fryer to 375°F (190°C). This should take about 5 minutes, ensuring it reaches the ideal cooking temperature.

Prepare the Veggies: Rinse the bell peppers, mushrooms, and spinach thoroughly. Finely chop them (and the olives, if you're including them) and place them in a medium-sized bowl. Add the Italian seasoning and garlic powder to the veggies, stirring well to combine all the flavors.

Roll Out the Dough: Sprinkle a little flour on a clean surface. Take your pizza dough and roll it out with a rolling pin until it is about ¼ inch thick. Use a round cookie cutter or a glass to cut out circles of dough, aiming for pieces that are approximately 2-3 inches in diameter.

Assemble the Bites: Lay each dough circle flat on your work surface. Spoon about 1 teaspoon of pizza sauce onto the center of each circle. Generously sprinkle shredded mozzarella cheese over the sauce, then top with a spoonful of the prepared veggie mixture. Be cautious not to overfill to prevent spillage during cooking!

Seal the Bites: Carefully fold each dough circle in half to form a half-moon shape. Using a fork, press along the edges to seal the dough securely, locking in all the tasty fillings.

Spray and Arrange: Lightly coat the air fryer basket with cooking spray or brush with olive oil to prevent sticking. Arrange the veggie pizza bites in a single layer in the basket. Make sure to leave some space between each bite for optimal air circulation during cooking.

Cooking: Air fry the pizza bites at 375°F (190°C) for 8-10 minutes. Keep an eye on them until they turn golden brown and the dough is fully cooked. Depending on your air fryer’s capacity, you might need to prepare them in batches.

Serve: Once cooked, carefully remove the pizza bites from the air fryer and let them cool for a minute or two. Serve them warm, accompanied by extra pizza sauce for dipping, for an even more delightful experience!
